For example, the&nbsp;healthy sounding&nbsp;<a href=\"http:\/\/www.timhortons.com\/ca\/pdf\/nutrition-guide-can.pdf\">Tim Horton&#8217;s Raisin Bran muffin<\/a>&nbsp;packs a whopping 410 Cal, 490 mg of sodium and 40 g of sugar, more than any of the donuts. Now there&#8217;s nothing wrong with cake, but let&#8217;s call a spade a spade. No, I&#8217;m talking about wholesome homemade muffins with quality ingredients. Think of them not as cake but as bread&#8217;s&nbsp;nuttier,&nbsp;seedier, fruitier and more exciting cousin.<\/p>\n<p>I&#8217;m an addict. I eat a few every day: breakfast, pre\/mid\/post-workout, desk snacking&#8230;&nbsp;Muffins are a great &#8220;real food&#8221; alternative to energy bars.&nbsp;I make different kinds, but I always return to one recipe. It has been&nbsp;refined over zillions of batches, with no two batches exactly the same. Here&#8217;s the latest iteration:<\/p>\n<div>\n<ul>\n<li><i>1\u00bd&nbsp;c. whole wheat flour (or some blend of quinoa, chickpea or buckwheat flour)<\/i><\/li>\n<li><i>\u00bd&nbsp;c. flax seed meal<\/i><\/li>\n<li><i>\u00bd&nbsp;c. oat\/wheat bran or large flake oats<\/i><\/li>\n<li><i>\u2153&nbsp;c.&nbsp;shredded coconut (I use unsweetened.)<\/i><\/li>\n<li><i>2 tsp. baking powder<\/i><\/li>\n<li><i>1 tsp. baking soda<\/i><\/li>\n<li><i>2 tsp. cinnamon<\/i><\/li>\n<li><i>1 tsp. nutmeg<\/i><\/li>\n<\/ul>\n<ul>\n<li><i>3 eggs<\/i><\/li>\n<li><i>1 c. buttermilk\/milk<\/i><\/li>\n<li><i>\u00bc c. oil (vegetable, sunflower, coconut, light olive&#8230;)<\/i><\/li>\n<li><i>2 tsp. vanilla extract<\/i><\/li>\n<li><i>zest of 1 orange (or sub&nbsp;\u2153&nbsp;c.&nbsp;<i>orange juice for<\/i>&nbsp;buttermilk\/milk)<\/i><\/li>\n<li><i>3 c.&nbsp;grated carrot (or zucchini or a blend)<\/i><\/li>\n<li><i><i><i><i>1 apple chopped into small pieces (I leave the skin on.)<\/i><\/i><\/i><\/i><\/li>\n<li><i>\u00bd c. chopped walnuts<\/i><\/li>\n<li><i>\u2153&nbsp;c.&nbsp;sunflower\/pumpkin\/hemp seeds<\/i><\/li>\n<li><i>1 c. chopped dates\/raisins\/cranberries\/currants\/apricots (some blend)<\/i><\/li>\n<li><i><i>\u00bd&nbsp;c.&nbsp;crushed pineapple (optional: sub for&nbsp;\u00bd&nbsp;c.&nbsp;carrot)<\/i><\/i><\/li>\n<li><i>sweetener (optional, to taste: brown sugar, honey, malt syrup&#8230;)<\/i><\/li>\n<\/ul>\n<table align=\"center\" cellpadding=\"0\" cellspacing=\"0\" class=\"tr-caption-container\" style=\"margin-left: auto; margin-right: auto; text-align: center;\">\n<tbody>\n<tr>\n<td style=\"text-align: center;\"><a href=\"http:\/\/4.bp.blogspot.com\/-leD8f2tFAuk\/UG2Wqb9nJaI\/AAAAAAAAAN0\/05cNZD66tmc\/s1600\/everything+including+the+kitchen+sink.jpg\" imageanchor=\"1\" style=\"margin-left: auto; margin-right: auto;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"336\" src=\"https:\/\/mikaelstaer.com\/clients\/cbeals\/dev\/wp-content\/uploads\/2012\/10\/everything-including-the-kitchen-sink.jpg\" width=\"400\" \/><\/a><\/td>\n<\/tr>\n<tr>\n<td class=\"tr-caption\" style=\"text-align: center;\">Everything<i> including<\/i> the kitchen sink.<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<\/div>\n<div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<\/div>\n<\/div>\n<\/div>\n<ol>\n<li>Mix dry ingredients.<\/li>\n<li>In a separate bowl, whisk together eggs, buttermilk\/milk, oil, vanilla, sweetener and orange juice\/zest.<\/li>\n<li>Preheat the oven to&nbsp;350\u00b0F&nbsp;(180\u00b0C). This doesn&#8217;t take half an hour\u2014that just wastes energy.<\/li>\n<li>Add wet ingredients to dry ingredients and stir just enough to blend.<\/li>\n<li>Mix in grated carrot, pineapple, apple pieces, dried fruit, walnuts and seeds.<\/li>\n<li>Adjust the consistency of the batter as needed by adding liquid. It shouldn&#8217;t be clumpy or runny.<\/li>\n<li>Fill muffin pans. The recipe makes about two dozen small muffins or fewer larger muffins.<\/li>\n<li>Bake 16-18 minutes at 350\u00b0F (180\u00b0C).<\/li>\n<li>Muffins keep for ~3 days and freeze well.<\/li>\n<\/ol>\n<div class=\"separator\" style=\"clear: both; text-align: center;\">\n<a href=\"http:\/\/2.bp.blogspot.com\/-1jp0b39hnwA\/UG1V0AJG-3I\/AAAAAAAAAMo\/jaMZwsjMztM\/s1600\/1003122028-00.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" decoding=\"async\" border=\"0\" height=\"238\" src=\"https:\/\/mikaelstaer.com\/clients\/cbeals\/dev\/wp-content\/uploads\/2012\/10\/1003122028-00.jpg\" width=\"400\" \/><\/a><\/div>\n<div style=\"text-align: center;\">\n<\/div>\n<p>Almost every ingredient is optional, so don&#8217;t sweat it if you don&#8217;t have something. Here&#8217;s a shocking revelation: you don&#8217;t have to follow recipes to a tee\u2014it&#8217;s ok to experiment. <a href=\"http:\/\/en.wikipedia.org\/wiki\/Martha_Stewart\">Martha Stewart<\/a>&nbsp;won&#8217;t swoop down in a black helicopter and confiscate your apron.&nbsp;It&#8217;s nearly impossible to bake something inedible, especially if you&#8217;re a ravenous athlete.<\/p>\n<p><i>OMG, WHEAT! Wheat is the root of all evil!<\/i>&nbsp;Sorry&nbsp;<a href=\"http:\/\/www.huffingtonpost.com\/2012\/02\/21\/gluten-sensitivity-elimination-diet_n_1291732.html?\">anti-gluten crusaders<\/a> and <a href=\"http:\/\/hells-ditch.com\/2012\/08\/archaeologists-officially-declare-collective-sigh-over-paleo-diet\/\">paleo zealots<\/a>.&nbsp;I&#8217;ve experimented with flourless baking and wheat alternatives&nbsp;with mixed results. The Western diet&nbsp;is too wheat-heavy, no argument there. But too many alienate the culinarily-challenged&nbsp;masses&nbsp;with&nbsp;<a href=\"http:\/\/www.youtube.com\/watch?v=lAeDR2fE0jA\">intimidating cooking techniques<\/a>&nbsp;and&nbsp;exotic ingredients (e.g. guava nectar, acai berries, chia butter,&nbsp;<a href=\"http:\/\/www.enotes.com\/shakespeare-quotes\/eye-newt-toe-frog\">eye of newt<\/a>&nbsp;etc.).
